Beef with broccoli

Ingredients:
For the meat:
400 g aged beef flank steak
1 tsp baking soda
1 tbsp soy sauce
1/4 tsp pepper
2 tbsp water
1 tbsp cornstarch
Stir-fry sauce:
1 tbsp oyster sauce
2 tbsp soy sauce
2 tbsp brown granulated sugar
approx. 200 ml chicken stock
1 tbsp cornstarch
Also:
1 broccoli
1 tsp salt
3 garlic cloves
1/2 tbsp ground ginger
To finish:
sesame oil
sesame seeds
Slice the beef thinly. Cut the broccoli into bite-size pieces. Finely chop the garlic.
In a bowl, mix the beef with baking soda, soy sauce, oyster sauce, pepper, water, and cornstarch. Set aside and marinate for at least 15 minutes.
Boil the broccoli in salted water until half-tender. Drain and place it in a bowl of ice water to keep its color. Add a little sesame oil to a wok or large pan. Once hot, add the marinated beef and sear over high heat. Remove the beef and set aside.
Make the stir-fry sauce: in a small bowl, mix the stock, oyster sauce, soy sauce, sugar, and cornstarch until combined. Add 1 tbsp sesame oil to the pan, then add the chopped garlic and ginger. Add the broccoli and stir-fry briefly (about 1 minute).
Return the beef to the pan and add the sauce. Stir for 1–2 minutes until the sauce thickens and coats everything evenly.
Serve with rice, sprinkled with sesame seeds.
