A recipe from the 'Chefs' Tips' series
Even a salad can be a complete meal when prepared properly. A Caesar salad is built on crisp lettuce leaves, a rich creamy dressing, well-toasted croutons and a final seasoning that brings it all together into a fresh, harmonious whole. It’s light, quick to make and ideal for days when you want something simple yet full of flavour.

When it comes to salad, presentation is just as important as the preparation itself. A Caesar salad looks its best on a Gaya Elements Quest North plate, which provides plenty of space for the crisp leaves, croutons and finishing touches. Served correctly, it looks simple and fresh, whilst also appearing as a dish that deserves a place on the table.
1. Put the honey, anchovies, mustard, lime juice, Worcestershire sauce and egg yolk into a large bowl.
2. Mix everything together thoroughly so that the ingredients combine to form the base of the dressing.
3. Gradually add the olive oil, stirring constantly, until the dressing takes on a creamier consistency.
4. Add the grated Parmesan, black pepper and salt to taste. Give it another stir.
5. Add the romaine lettuce leaves to the bowl containing the dressing and toss them gently so that the dressing coats each leaf.
6. Arrange the salad on a plate, add the toasted croutons and finish by sprinkling with Parmesan. Serve immediately.
