Ingredients:

For the meat:

1 pork tenderloin

salt, black pepper

olive oil

5 slices of bacon

80 g butter

1 garlic bulb

a sprig of rosemary

For the sauce:

200 g mushrooms

1 tbsp butter

100 ml cooking cream

salt, black pepper

optional: a few drops of lemon

Preparing the tenderloin

Preheat the oven to 200 °C. Cut the pork tenderloin into approx. 5 cm pieces, season with salt and pepper, and rub with olive oil.

Wrap

Wrap each piece of meat with a slice of bacon and sear on both sides in olive oil.

Bake

In the Saturn Terra pan, add butter, rosemary, and the halved garlic bulb. Place the pan in the preheated oven for 8–12 minutes (depending on desired doneness).

Preparing the sauce

While the meat is in the oven, briefly sauté the mushrooms in butter, season with salt and pepper, deglaze with cream, and bring to a quick boil.

Serve

Serve the finished medallions on Gaya Elements North plates and pour over the mushroom sauce. As a side dish, we recommend potatoes or a fresh salad.
