Ingredients:

plain yogurt (2 × 125 g)

2 eggs

2 tbsp granulated sugar

3 tbsp milk

3 tbsp pumpkin purée

2 cups all-purpose flour

1 tsp baking soda

a pinch of salt

2 tbsp pumpkin spice syrup
(or 1 tsp pumpkin spice mix)

For frying:

ghee butter

For topping:

sautéed apples with cinnamon and sugar

This amount makes approximately 15 pancakes.

1. Cut the pumpkin into smaller pieces, bake until soft, and once cooled, blend it into a smooth purée.

2. Mix together the yogurt, milk, sugar, eggs, and pumpkin purée. In a separate bowl, combine the flour, baking soda, and a pinch of salt. Add the dry ingredients to the wet mixture and stir until smooth. Finally, mix in the pumpkin syrup and let the batter rest for 5 minutes.

3. Fry the pancakes in ghee butter until golden brown on both sides.

4. In the same pan, sauté the apples in butter, sprinkle with sugar, and let them caramelize.

5. Season with cinnamon and serve with the pancakes.
