With a little imagination, an ordinary dough can turn into a focaccia worthy of hanging in an art gallery. Every herb leaf, slice of vegetable, and drop of olive oil creates a tiny artwork that can be both admired and savoured at the same time.

Ingredients:

350 g plain flour

1 tsp granulated sugar

4 g dry yeast

220 ml lukewarm water

1 tsp salt + a little extra for sprinkling

2 + 3 tbsp olive oil

For decoration:

fresh rosemary

carrot greens

cherry tomatoes

capers

carrot

black sesame seeds

spring onion

salt and other toppings to taste

1. In a bowl, mix the flour, sugar, salt, and dry yeast. Add the lukewarm water and 2 tablespoons of olive oil. Knead into a smooth dough (about 5 minutes – by hand or using a mixer). Place the dough into a baking tray brushed with olive oil (approx. 40 × 28 × 5.5 cm).

2. Sprinkle lightly with flour, cover with a tea towel, and let rise in a warm place for 90 minutes. Preheat the oven to 190 °C. Once risen, gently stretch the dough with your fingers to cover the entire tray.

3. Decorate as you like – for example, with carrot slices, cherry tomatoes, herbs, carrot greens, spring onions, and sesame seeds.

4. Drizzle with olive oil and lightly sprinkle with salt. Bake for about 25 minutes, until the surface is golden brown.

5. Let it cool slightly, then slice and serve.
